酶是自然界重要的生命活性物质,其结构和性质容易受到外部环境的影响,提高及保持酶活性是当今研究的热点之一。本文以胃蛋白酶为模型,研究了两性离子化合物甲基丙烯酰氧乙基磷酰胆碱(MPC)、磺酸基甜菜碱甲基丙烯酸酯(SBMA)、羧基甜菜碱甲基丙烯酸酯(CBMA)对胃蛋白酶活性的影响。结果表明:在60℃条件下经过2h,添加CBMA的胃蛋白酶活性是对照样的453%;60℃条件下6h后仍为对照样的胃蛋白酶活性的330%。CBMA可显著提高胃蛋白酶活性。 |

Enzyme is an important active substance in nature, its structure and properties are easily affected by the external environment. Now it is one of the hot topics in the research to increase and maintain enzyme activity. In this paper, pepsin was used as a model to study the effect of zwitterionic compounds such as methacryloyloxyethyl phosphorylcholine (MPC), sulfobetaine methacrylate (SBMA), carboxybetaine methacrylate (CBMA) on pepsin activity. The results showed that the pepsin activity in the presence of CBMA was 453% of the control after 2h at 60℃, and still 330% of the control pepsin after 6h at 60℃. CBMA could significantly increase pepsin activity. |
